


Today was a day of preparing, we made some breakfast to have for the weekend. Homemade granola is always a family hit, although K has told me that the granola was too chocolatey when we made the triple chocolate granola from Sally’s Baking addiction. I decided today to switch it up and try an orange chocolate version. Got the kids involved with the mixing, always a good way to get them to try anything,



We grabbed the recipe for the triple chocolate version and set about finding the ingredients. We mixed the honey and coconut oil, I use the unrefined so gives it a slight coconut taste but we do not mind coconut is a fan favourite in this house. We added the brown sugar the the liquid mix, some orange juice, the zest of two oranges and some vanilla (I love vanilla in everything)!!



Once everything was well mixed, a turn for each kiddo (making sure that most of the granola was still in the bowl!) A couple little tasters here and there and the granola was in oven. Oh my what an amazing smell. The whole house smelled amazing while this was cooking, we couldn’t wait for it to come out of the oven.
Chocolate chips were mixed in right out of the oven adding to the clumps and melting deliciously all over the granola clumps. Man oh man was delicious. The kids loved it plain with a spoon, the hubby ate it with yogurt and fruit and I had it with coconut or cashew milk.
While the granola was cooking I started some homemade yogurt. I used the recipe from The Prairie Homestead, and a couple of large mason jars that I had. I heated the milk allowed it to cool and then added the leftover yogurt I had in the fridge. I put the jars in an insulated cooler and let it sit. I was so excited when I went back opened the cooler and pulled out yogurt. Thanks for the wonderful recipe. Next time I am going to try thickening it a little more. Maybe straining out some of the whey to get a more Greek yogurt style.



These yummy breakfast additions provided a yummy breakfast and snack for a couple of days… even with a double batch it disappeared fast with a family of 6. I can’t wait to try some other flavor combinations and stock up with some granola in the freezer… you can never have enough.
Recipe
Prep time 15 minutes
Cook time 30 minutes
Yield 16 servings (1/2 cup each) approx 6 cups quick cooking oats
- 6 cups quick cook oats
- 1/2 cup coconut oil, melted
- 1/2 cup packed brown sugar
- 3/4 cup honey
- 1/2 tsp salt
- 1 cup semi sweet chocolate chips Mini
- zest of two oranges
- 1/4 cup orange juice
- Preheat oven to 325ÂșC.
- Mix the melted coconut oil, packed brown sugar, honey, orange juice and orange zest together. Pour over the oats, and salt mixing until well combined.
- Place the mixture on a lined cookie sheet, (parchment paper works well).
- Cook for 15 minutes remove from oven, stir and return to oven for the remaining 15 minutes.
- Remove from the oven and stir in chocolate chips while still warm. Allow to cool and nice clumps will form.
Store in air tight jar for 3-5 days on the counter. For longer storage place in the freezer.
